Ingredients
- Warm water 200 g
- Remilled durum wheat semolina 400 g
- Salt a small pinch
Directions
- Pour the flour over a bowl and form a fountain by adding a pinch of salt.
- Add the warm water little by little, and start working with your fingers, or a fork. to slowly incorporate all the water.
- Continue to knead with your hands for about ten minutes until you get a homogeneous and elastic consistency.
- Make a compact ball, cover it with a cloth and let it rest at room temperature for about 15 minutes.
- After the rest time, take a piece of dough, leaving the rest covered, and make a slop about 1 cm thick from which you will get small pieces about 1 cm large.
- With the help of a smooth blade knife, form shells by dragging each piece towards you on the pastry board.
- Then turn the shell over to itself so as to form the ear.Good job!
