Homemade orecchiette

Orecchiette mon amour: a milestone of the Italian cuisine, making them by hand is not difficult if you are not in a hurry, plus it’s fun and relaxing. 

Ingredients

  • Warm water 200 g
  • Remilled durum wheat semolina 400 g
  • Salt a small pinch

Directions

  1. Pour the flour over a bowl and form a fountain by adding a pinch of salt.
  2. Add the warm water little by little, and start working with your fingers, or a fork. to slowly incorporate all the water.
  3. Continue to knead with your hands for about ten minutes until you get a homogeneous and elastic consistency.
  4. Make a compact ball, cover it with a cloth and let it rest at room temperature for about 15 minutes.
  5. After the rest time, take a piece of dough, leaving the rest covered, and make a slop about 1 cm thick from which you will get small pieces about 1 cm large.
  6. With the help of a smooth blade knife, form shells by dragging each piece towards you on the pastry board.
  7. Then turn the shell over to itself so as to form the ear.Good job!
