A tasty dish where flavor meets wellness! 🌱✨ My version of classic gnocchi with artichokes skips the speck and adds a twist with crispy breadcrumbs, bringing the perfect crunch to every bite. Plus, artichokes are super healthy and full of flavor—an ideal match for a cozy, wholesome meal. 💚
Ingredients
- Homemade gnocchi 300 gr (follow my recipe here)
- 2 artichokes
- 1 small Tropea onion
- 2 tablespoons coarse breadcrumbs
- Parsley
- Extra virgin olive oil
- Salt
- Pepper
Directions
- Clean the artichokes by cutting off the tips, removing the outer leaves and the bottom part of the stem. Halve them, remove any inner choke, slice thinly, and soak them in lemon water for about 30 minutes.
- Finely chop the onion and cook it over low heat with a bit of oil for about 10 minutes, until softened and golden. Add the artichokes and cook over medium heat until tender, about 10-15 minutes.
- In a separate pan, toast the breadcrumbs with a little oil until golden brown.
- Cook the gnocchi and transfer them directly to the pan with the artichokes. Sauté for a minute over medium heat, adding 3 tablespoons of the cooking water. Be careful to gently swirl the pan to avoid breaking the gnocchi.
- Remove the pan from heat, and just before serving, sprinkle the gnocchi with a tablespoon of chopped parsley and the toasted breadcrumbs.
