Tiramisù

No need to introduce it… Tiramisù rules them all!

Ingredients

  • 500 grams of mascarpone
  • 4 eggs
  • 4 tablespoons sugar
  • Coffee
  • Ladyfingers
  • Dark chocolate flakes or drops
  • Cocoa powder

Directions

  1. First prepare the coffee, just enough to soak the Pavesini, pour it into a bowl and let it cool.
  2. Whip the 4 egg yolks with 4 tablespoons of sugar until you get a nice mixture is light and creamy, then add the mascarpone cheese until creamy with no lumps.
  3. Now add a pinch of salt to the egg white and mount until stiff peaks.
  4. When the egg whites are ready add them a little at a time and gently into the mixture of egg yolks and mascarpone; you have now the cream of tiramisu.
  5. Add the chocolate chips at your taste.
  6. Lightly soak ladyfingers in the coffee (should be well soaked but not too wet.)
  7. Put them in the container of service and cover with a layer of mascarpone cream, if the tiramisu is high enough place a second layer of Pavesini and cover with the remaining cream.
  8. Cover the cake with cocoa powder.
  9. Put in the fridge for a couple hours before serving.
