Gnocchi with fava beans and pancetta

There is no spring in Tuscany without fava beans!
Fava beans with Pecorino is my favorite spring appetizer but there are also many other ways to enjoy fava beans, such as gnocchi.

Ingredients

  • Homemade gnocchi 600 gr (follow my recipe here)
  • 700 gr. of fava beans
  • 2 cloves of garlic
  • Parsley
  • Pecorino Romano
  • Black pepper

Directions

  1. Clean the fava beans, remove them from the pod, and wash the beans under running water
  2. In a pan pour extra virgin olive oil and fry the garlic with the pancetta
  3. Add the fava beans, season with salt, add the black pepper, bathe everything in a glass of water
  4. Put the lid on and let the favas cook over medium heat for at least fifteen minutes
  5. In the meantime, chop the parsley and add it, let it cook for another 5 minutes
  6. Cook the gnocchi in a pot with plenty of boiling salted water.
  7. Drain them with a spider as soon as the gnocchi start to come out and put them directly in the pan with the seasoning
  8. Mix well by mixing the gnocchi with the seasoning of the fava beans
  9. Finish the dish grating Pecorino Romano on top
